One-Dish Kielbasa, Asparagus, and Rice

Bring the whole family to the table with this fancy-looking dinner – One-Dish Kielbasa, Asparagus, and Rice. No one will know how easy it was to make, or that there is only one pot to wash after dinner!

One-Dish Kielbasa, Asparagus, & Rice

This recipe combines three of my all-time favorite foods – kielbasa, asparagus, and creamy rice. It’s a springtime comfort food you’ll want all year long! And it isn’t as hard to make as you might think!

Risotto-style creamy rice dishes can be challenging to make. They usually involve standing over the stove and a lot of stirring. Who has time for that? Certainly not me! So this is a risotto-style dish… it’s not technically risotto because I ignored it on the stove quite a bit. (Don’t you love it when you can ignore food while it’s cooking?) But it has that creamy texture and full flavor that you want from a risotto.

So everybody wins!

I used Arborio rice in this recipe. Arborio is a very short-grain rice that is perfect for risotto-style dishes. This rice does need a little more water than other kinds of rice. Usually, you would use 2 cups of water and 1 cup of rice. For Arborio rice, you’ll want 3 cups of water (or in this recipe, chicken broth) for 1 cup of rice. Kielbasa is a great sausage to use in this dish. It’s a very mild sausage, so it doesn’t have a big overpowering “smoked sausage” kind of flavor. We used to eat a lot of kielbasa, and have kind of fallen out of that habit. I think it might be time to get back on the kielbasa kick! You’ll find it in your grocery store near the bacon.

And fresh spring asparagus… need I say more? There is something about seeing those bright green spears in the produce section that really just says “it’s finally spring!” I love cooking with asparagus when I can get it for a reasonable price in the spring.

Creamy rice, crispy asparagus, and subtly-smoked sausage… This is the perfect comfort food for springtime, or the perfect meal for a busy weeknight anytime!

Ingredients
  

  • 2 Tablespoons butter
  • 1 cup Arborio rice short-grain
  • 3 cups chicken broth
  • 14- ounce package kielbasa sausage sliced
  • 1 bunch fresh asparagus washed and cut into 1-inch pieces

Instructions
 

  • Melt butter in a large saucepan over medium heat.
  • Add rice and toast for 2-3 minutes, stirring frequently, until rice starts to brown.
  • Reduce heat to low. Add 1 cup of chicken broth. Cover and cook over low heat, stirring occasionally until all broth is absorbed.
  • Add 1 cup of chicken broth and the sliced kielbasa sausage. Cover and cook over low heat, stirring occasionally until all broth is absorbed.
  • Add 1 cup of chicken broth and the asparagus. Cover and cook over low heat, stirring occasionally until all broth is absorbed.
  • Serve immediately.
