Easy Slow Cooker Sausage & Potatoes

You can’t go wrong with this classic favorite! This recipe for Easy Slow Cooker Sausage & Potatoes is a fast and simple way to enjoy a family dinner, without a lot of clean up!

Easy Slow Cooker Sausage & Potatoes

This easy one-dish meal will keep everyone happy! You’ll like Easy Slow Cooker Sausage & Potatoes because it’s simple to toss together, and it hits most of the major food groups. Your families will love it because it’s tasty!

We tried to plant potatoes in our garden this year, but we had a serious crop failure. Out of two 50-foot long rows of potatoes, we only got about 6 pounds of very tiny potatoes. I have been trying to figure out what to do with these… because, let’s face it, I’m not about to stand at the sink and peel 6 pounds of tiny potatoes!

Then this idea hit me… It’s a classic – sausage, potatoes, and green beans. And it’s a perfect way to use small potatoes. And it smells delicious simmering in your slow cooker all day!

Don’t worry, you don’t need to use potatoes out of your garden. (Actually, as hard as potatoes are to grow, and as inexpensive as they are to buy, I strongly recommend that you do not plant potatoes in your garden!) Just grab a bag of new potatoes or the adorable potatoes from the Little Potato Company, toss them in your slow cooker, and you’re ready to go!

I used kielbasa sausage for this, but you can use any kind of sausage you like. Kielbasa is sort of a family tradition for me, so I enjoy using it wherever I can. If you prefer a different variety of sausage, use your favorite kind instead.

This recipe has very little extra salt added to it. You’ll need some to flavor all those potatoes, but go easy at first. Depending on how salty your chicken broth and sausage are, you may not need to add much extra salt to your slow cooker. It’s much easier to add a little extra salt at the end than it is to take away the extra if your dish is too salty!

Ingredients
  

  • 3 pounds small potatoes new potatoes, or Little Potato Company potatoes
  • 2 14- ounce packages kielbasa cut into 2-3 inch long pieces
  • 2 cups chicken broth
  • 2 teaspoons salt
  • 1 Tablespoon dried parsley crushed
  • 3 14.5- ounce cans green beans drained

Instructions
 

  • Combine all ingredients except green beans in a 6-quart slow cooker.
  • Stir to mix.
  • Cover and cook on high for 3-1/2 hours, or on low for 6-7 hours, until potatoes are fork-tender.
  • Drain green beans and add to the slow cooker. Gently stir to mix.
  • Cover and cook for 30 minutes more, until green beans are heated through.
  • Serve immediately
