This recipe for Slow Cooker Fajita Rice Bowls is so easy and so delicious! It is so close to a one-dish meal. You’ll need to start in a large skillet on your stove. If you have a Ninja slow cooker like this one, you can skip the skillet and use the browning feature on the slow cooker!
I found this recipe a while ago in “Slow Cooking All Year ‘Round” from Gooseberry Patch. I have made it a few times, and it’s a hit every time! The original recipe calls for a chipotle-lime marinade. I couldn’t find that in my local grocery store. But I did find this Caribbean Jerk marinade from KC Masterpiece, and it was delicious in this recipe!
If you’re not crazy about ground beef, or you want to try something a little different, you can always substitute in another kind of ground meat. Check out this post to see what the differences are.
Crock everything up on low for 2-4 hours. The beauty here is that the meat is already cooked, and the veggies are well on their way. You want it to get all good and heated through, and the flavors to start to meld. If you have any cooked ground beef stashed in your freezer, you can skip some of the first step, too!
Pop some pre-cooked rice out of your freezer and into the microwave for about a minute, and top with the fajita mixture! Serve with whatever toppings you like – sour cream, shredded cheese, tortilla chips, or warm flour tortillas… You can’t go wrong with a starting point like this!

Crockpot fajita rice bowls
Ingredients
- 1 pound ground beef
- Salt and pepper to taste
- 1 onion chopped
- 1 green pepper chopped
- 1/2 cup sweet-spicy marinade we like this Carribean Jerk marinade from KC Masterpiece
- 16 ounce can crushed tomatoes
- 8 ounce can tomato sauce
- 1 cup beef broth
- Cooked rice
- Garnish: sour cream shredded cheese, tortilla chips
Instructions
- Brown ground beef in a large skillet with salt and pepper. Drain. Place in 6-quart slow cooker.
- In the same skillet, saute onion and green pepper with marinade until just tender. Add to slow cooker.
- Add tomatoes with juice, tomato sauce, and broth. Add more salt and pepper, if desired.
- Cover and cook on low for 2-4 hours. Serve over rice. Top with garnishes as desired.
