Personal Pepperoni Pizza Meatloaf

OK. I know what you’re thinking. “Meatloaf. Ugh.” I get it, trust me. Meatloaf is one of John’s favorite things (I know, right?) but I’m not crazy about it all the time. So I’ve been trying to make meatloaf more exciting. And this recipe for individual sized meatloaves? They taste just like pizza!
I used ground turkey in my recipe, partly because I found it on sale at the grocery store (and I stocked up!) and partly for a change of pace. You could easily use ground beef, ground pork, or even ground chicken for this recipe, it’s up to you and what your family likes.

This recipe starts off the same as a more traditional meatloaf – eggs, breadcrumbs, onion, and ground meat. Then I added a few fun things – mini pepperoni (you could also use regular size pepperoni, cut into quarters), pizza sauce, and mozzarella cheese. That’s right – throw all those things together in a bowl and get to mixing! It’s messy, but it’s easiest to mix it all together with your hands.
Once you have it all combined, separate the meat mixture into 4 roughly equal parts. Shape each portion into a ball, then squish it a little to a loaf shape. I used a mini loaf pan for mine, but you could also cook these in a larger pan. Just separate the mini loaves so they don’t touch.
Cook these at 350 degrees for 30-40 minutes. You want the temperature in the middle of the meatloaves to be 165 degrees F (160 degrees if you’re using beef or pork). I used my handy-dandy probe thermometer and set the alarm to go off at 165 degrees. It’s so easy, and it means I don’t have to watch the clock or worry about getting meat over- or under-cooked.
When the meatloaves are done, top with extra pizza sauce and mozzarella cheese. Let sit for 5-10 minutes until the cheese melts. Serve this with a side of garlic bread and a salad, and it can be just like pizza night!

Personal Pizza Meatloaf
Ingredients
- 1 egg beaten
- 1/2 onion chopped
- 1/4 cup pizza sauce
- 1 Tablespoon Worcestershire sauce
- 1 clove garlic minced
- 1/4 cup breadcrumbs
- 1 pound ground turkey or other meat
- 1/3 cup mini pepperoni
- 1 cup shredded Mozzarella cheese
- Extra:
- 1/4 cup pizza sauce
- 1/2 cup shredded Mozzarella cheese
Instructions
- Combine all ingredients (except extra 1/4 cup sauce and 1/2 cup cheese) in a large bowl. Using your hands, mix well to combine ingredients.
- Separate meat mixture into four roughly equal portions.
- Shape each portion into a ball, then gently flatten into a loaf shape. Place meatloaves into individual wells of a mini loaf pan, or separated in a large baking pan (do not let meatloaves touch).
- Bake, uncovered, at 350 degrees F for 30-40 minutes, or until internal temperature reaches 165 degrees F.
- Remove from oven, top with extra sauce and cheese, and let sit for 5-10 minutes before serving.
