For some reason, rice has been my go-to comfort food lately. I don’t have a good explanation for it, I’ve just been craving rice (of all things). So I’m going with it, and I’ve been experimenting with some recipes for rice! I’ve wanted to try making a cilantro-flavored rice for a while, and I finally stopped being afraid to try and just jumped right in. You know what? It turned out pretty darn tasty, if I do say so myself!

After I mastered the risotto-style rice in this One-Dish Kielbasa, Asparagus, & Rice recipe, I wanted to try something a little different. Creamy rice is always yummy, but I was looking for something that wasn’t quite as sticky. I used Jasmine rice in this recipe, but you can use any long-grain white rice you want. (Regular “white rice” you find in the grocery store would be perfect.) I like the Jasmine rice because the grains are a little longer and thinner, and they barely stick together at all.

And cilantro… I love the flavor that cilantro gives to anything, especially a Mexican-style dish. (I ate so much of this rice with – and in – the tacos I made with this Slow Cooker Taco Beef!)

So it turns out, I was afraid for nothing! This rice really was pretty simple to make! I salted the water before I added the rice to give it just a little more flavor. Then I added fresh, chopped cilantro when the rice was finished cooking, and that was pretty much it!

Now that I know how easy it is to make, this Simple Cilantro Rice is going to be a staple around here! What other flavors would you like to try “mixed in” to your rice?

Simple Cilantro Rice

Cook Time 25 mins

Ingredients
  

  • 2 cups water
  • 1 teaspoon salt
  • 1 cup Jasmine rice or long-grain white rice
  • 1/2 cup chopped fresh cilantro

Instructions
 

  • Put water and salt into a saucepan. Cover, and bring to a boil over medium-high heat.
  • When water is boiling, add rice. Cover, reduce heat to low.
  • Let rice simmer over low heat, stirring once or twice, until all water is absorbed.
  • Remove rice from heat. Stir in chopped cilantro.
  • Serve immediately.
  • Store leftovers in an air-tight container in the refrigerator.
