I can’t even tell you guys what a high I’m riding this week! (No pun intended…) I have wanted a horse since I was a little girl, and this week I finally got one! His name is Beau, and he’s a 16-year-old Quarter Horse. He is just the sweetest guy! He’s going to be the perfect horse for me to get back into riding, and to teach my son how to ride. We all love him, and he loves us!
As I was putting together the grocery list for this week’s meal plan, I realized that there is almost no fresh produce in this week’s recipes! Look, let’s just be honest… sometimes that happens, right? And that’s where having a few bags of frozen veggies in your freezer or canned veggies in your pantry can come in handy – pop those in the microwave, add some salt, pepper, and Parmesan cheese and you’ve got a side dish ready in a snap! Don’t be afraid to take a few shortcuts when you need to. The bottom line is that any veggie is a good veggie… and if you don’t eat your veggies every single day… well, that’s ok too!!
