I love pierogies. We used to eat them all the time growing up (with my Hungarian background, that’s not a big surprise). They are just so tasty… potatoes and cheese all wrapped up in a pasta shell… what’s not to love? A simple boil and saute in butter, and they are the world’s most perfect comfort food.
But pierogies can be more than that! I loved how they brought a little more “meat” (so to speak) to this simple one-dish meal. This recipe is from “Grilling & Campfire Cooking” by Gooseberry Patch. While I didn’t immediately think “outdoor cooking” when I saw this recipe, I sure did think easy summer recipe!
This recipe calls for frozen broccoli (does it get much easier than a bag of frozen veggies?), but you can swap the broccoli for any other vegetable that you like! Prefer carrots? Go for those! Does your family like a mixed vegetable blend? Use that instead! Or just change it up depending on how you’re feeling – use broccoli tonight and use sweet corn the next time.
You could also use fresh vegetables instead of frozen. Just steam your vegetables in the microwave or on the stove first, the few minutes they cook in this dish won’t be quite enough to get them cooked.

One-Dish Pierogie Skillet
Ingredients
- 1 pound ground beef
- 16- ounce package frozen pierogies thawed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 10- ounce package frozen broccoli florets thawed
- 1 cup shredded Cheddar cheese
Instructions
- In a large skillett brown ground beef until fully cooked. Drain if needed.
- Add pierogies and cook for 4-5 minutes, until heated through.
- Stir in salt, pepper, and broccoli. Top with cheese.
- Reduce heat to low.
- Cover and cook for 4-5 minutes, until broccoli is heated through and cheese is melted.
- Serve immediately.
