Easy Maple-Glazed Carrots

Side dishes are always a challenge for me. I try do menu planning almost every week (check out some of the easy meal plans I put together with my friends here!). I always get the main dishes down, but I never think about sides. Then I’m stuck at dinner time, and we eat Cheez-its as a side for our lasagna. Or I toss another bag of plain frozen veggies in the microwave.
There is nothing wrong with plain frozen veggies.
Plain frozen veggies are great. They are inexpensive, and they don’t go bad in the produce drawer when you forget about them. (What? No… never…… she said sarcastically…) They also have just as much nutritional value as their fresh or canned counterparts.
But sometimes you want to do a little more than plain frozen vegetables. These Easy Maple-Glazed Carrots are the perfect compromise! They use frozen carrots (which are inexpensive, fast, and easy), and you cook them on the stove with 2 more ingredients, so you can say “I cooked!”
Everybody wins!
Don’t tell anyone that you started with frozen carrots, and no one will be able to tell!
Seriously, though, I love using frozen vegetables. I keep a few different varieties in my freezer most of the time. We can take out just as much as we need and pop the rest back in the freezer. Give them a quick steam in the microwave or a boil on the stove and your side dish is ready in just a few minutes.

Easy Maple-Glazed Carrots
Ingredients
- 1 12- ounce bag frozen sliced carrots
- 2 Tablespoons butter
- 1/4 cup maple syrup please, please use real maple syrup instead of imitation syrup or "pancake" syrup!
Instructions
- Combine all ingredients in a saucepan.
- Heat over medium, stirring frequently.
- Bring liquid to a simmer.
- Continue simmering, stirring frequently, until the carrots are heated through and almost all of the liquid has evaporated (10-15 minutes)
- Serve immediately
