I love Chinese food. But for a girl who grew up in New Jersey, near New York City, the Chinese food in southwest Indiana just isn’t quite the same. So we don’t go out for Chinese very often. I do cook some at home, pork stir fry is a staple for a quick weeknight dinner around here. But just with rice? All the time? That gets kind of boring. This Fried Spaghetti is a quick alternative to plain old rice.

Think Lo Mein, but done at home. With whatever ingredients you want to add. I found the basics for this recipe in “303 Simple & Satisfying Recipes” by Gooseberry Patch. I tweaked it a little bit, based on what I had on hand (and what I know John likes).

Go nuts with veggie substitutions. What’s in your favorite fried rice or lo mein dish? Start there and be creative!

Next time, I think I will try this with angel hair pasta instead of the spaghetti. All the flavor, but a little lighter.  Or maybe with shells so it’s a little easier for the 3-year old to eat, too. And I’m definitely going to bump up the veggie content. I’m thinking broccoli and bigger slices of carrots. I’m always looking for any place to sneak in a few extra veggies!

Ingredients
  

  • 16- ounce package thin spaghetti uncooked
  • 3 Tablespoons sesame oil
  • 1/2 onion chopped
  • 1/3 cup frozen peas and carrots
  • 1/4 cup bacon bits
  • 2 Tablespoons soy sauce
  • 2 Tablespoons stir fry sauce

Instructions
 

  • Cook spaghetti in a large pot according to package directions; drain.
  • Meanwhile, in a large saucepan, heat oil over medium heat. Saute onion, frozen vegetables, and bacon bits for 3 minutes, or until onion is soft.
  • Stir in soy sauce, stir fry sauce, and spaghetti. Toss well to coat.
  • Cook for 5 minutes, stirring occasionally.
  • Serve immediately

    Never made this before but it was a huge hit! I did use a smokey bacon for the bits and the flavor was just perfect.

    Sounds yummy! When my kids were small, I would shred zucchini and carrots and cook with tube pasta, at the end of cooking. They giggled while putting the tubes on their fingers, stuff in veggies and waving at me. They had an easy time eating all their veggies that way.

    I had never thought to do this, but it looks like such a yummy side dish! It’s like fried rice, but with pasta. Yum!
