If simple recipes are all you have time for, this Cheesy Ham & Veggie Bake is for you. It’s something you can toss together quickly and it doesn’t need much babysitting. Who doesn’t love a recipe like that?

It is so simple to make… boil some water, cook some pasta, toss in the veggies. Mix up an easy sauce. Toss it all together and hide it in the oven for half an hour. My kind of dinner! Use leftover ham, or grab some pre-cooked, pre-cubed ham from the grocery store to make it even a little bit easier.
I used California blend frozen veggies (broccoli, cauliflower, and carrots). If you don’t like that veggie combination, use something different! One of the frozen stir-fry veggie mixes would be delicious in this, too.

Cheesy Ham and Vegetable Bake
Ingredients
- 1-1/2 cup rotini pasta uncooked
- 16- ounce package frozen California blend veggies broccoli, cauliflower, and carrots
- 1/2 cup sour cream
- 1/2 cup milk
- 1-1/2 cup shredded Cheddar cheese divided
- 1 pound cooked ham chopped
- 1/2 onion chopped
- 1 clove garlic minced
- 1/2 cup seasoned breadcrumbs
Instructions
- Cook pasta to al dente doneness, according to package directions.
- Add frozen vegetables to cooking water during last minute of cooking, just to thaw the vegetables. Drain pasta and vegetables.
- Place pasta and vegetable mixture in a lightly sprayed 2-quart casserole dish.
- In a small bowl, mix sour cream, milk, one cup cheese, ham, onion, and garlic; stir into pasta mixture.
- Bake, uncovered, at 350 degrees for 30 minutes.
- Sprinkle with remaining cheese and bread crumbs during last 5 minutes of baking.
