Kids love anything that is just their size. The original version of these Kid-Friendly Cheeseburger Cups were so popular, I had to try them with a different flavor! These Mini BBQ Cheeseburger Cups are so tasty, and so much fun!

We like Pillsbury Grands Southern Homestyle Original Biscuits for this recipe. If you like buttermilk, use the buttermilk version instead. I had to use 2 kinds of barbecue sauce for this recipe – we didn’t have enough of either kind left in the refrigerator! I used about half and half Heinz Classic Sweet & Thick barbecue sauce and Heinz Kansas City Sweet & Smoky barbecue sauce.
PRO TIP: To be sure your cheeseburger cups cook evenly, load the muffin pan evenly. You’ll only have 8 biscuits. Start from the center of the muffin pan and work your way out. Keep 2 cups empty on each side so the muffins cook evenly.

Your kids can help with this dish, too! Have them help you press the biscuits flat and shape them into the muffin cups. If the pan you used to brown the ground beef isn’t too hot, they can help to spoon the meat into the biscuits. And they can definitely add the extra cheese to the top!

Mini BBQ Cheeseburger Cups
Ingredients
- 1 pound ground beef
- 1/2 cup onion chopped (about 1/2 onion); OR 1/2 cup frozen diced onion
- 1 cup barbecue sauce I used a combination of Heinz Classic Sweet & Thick and Heinz Kansas City Sweet & Smoky sauces
- 1 cup shredded Cheddar cheese
- 16.3 ounce can Pillsbury Grands Southern Homestyle Original biscuits
- Optional: extra Cheddar cheese
Instructions
- In a large skillet, brown ground beef and onion.
- When beef is cooked, stir in BBQ sauce and shredded Cheddar. Stir until heated through. Turn off heat and set aside.
- Open biscuits and separate. Press each biscuit into a thin circle, about 5 inches across.
- Press each biscuit into a cup of an ungreased muffin tin. (Biscuits should sit flat on the bottom of the cup and reach all the way up the sides.)
- Spoon meat mixture into biscuit cups.
- Bake, uncovered, at 375 for 15-20 minutes.
- Remove from oven and top with more cheese. Serve immediately.
