How to Make Instant Pot Chicken & Dumplings

I’ve had an Instant Pot for a while now, but I’ve actually been afraid to cook with it! (Kind of ironic, since I blog at My Fearless kitchen, right?!) But just look at it, there are so many buttons!
You know what? It turns out that if you read the instructions, it’s not so scary!
For the last couple of weeks, I’ve actually been cooking in my Instant Pot, instead of just using it as kitchen counter decor, and I am so glad that I took the leap and started! As much as I love my slow cooker (and I do love my slow cooker), the Instant Pot has saved me on a few recent nights when I didn’t have a plan for dinner.
Gee, if only I would follow my own meal plan, that wouldn’t be a problem!
So these Chicken & Dumplings… It’s perfect comfort food! It tastes like it’s been cooking all day long. There’s even a perfect shortcut to make the dumplings. (See the printable recipe card below for instructions.)
I used chicken thighs in this recipe. I like the way dark meat cooks in the Instant Pot better than white meat. On one of my first recipes in the Instant Pot, I wanted to stick with something that I knew would do well. Plus, I just love dark meat!

Instant Pot Chicken and Dumplings
Ingredients
- 1 pound boneless skinless chicken thighs
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon pepper we prefer Lawry's Seasoned Pepper
- 2 Tablespoons all-purpose flour
- 1 7.5- ounce can refrigerated biscuits regular size
- 1 Tablespoon dried parsley flakes
Instructions
- Place chicken thighs in the bottom of your Instant Pot. Pour chicken broth over the chicken.
- Place the lid on the Instant Pot, and be sure the steam handle is set to "sealing."
- Select the "Poultry" setting, on high pressure, for "normal" time (16 minutes on my Instant Pot).
- When the Instant Pot cooking is complete, let the pressure release by the natural release method for 10 minutes. Then finish the pressure release (if necessary) by the quick release method.
- Using a pair of tongs, remove the chicken from the Instant Pot and place it on a cutting board. Set aside.
- Press "Keep Warm/Cancel", then press "Saute."
- Add salt, pepper, and flour to the chicken broth in the Instant Pot. Whisk until combined (the broth will start to thicken.)
- Open the can of refrigerated biscuits. Using kitchen shears, cut each biscuit into thirds and add them to the broth mixture. Stir after every few biscuit pieces, or they will stick together. The broth will begin to boil, simply stir occasionally.
- Roughly shred the chicken using two forks (or your electric mixer) - the chicken should nearly fall apart.
- Return the shredded chicken to the Instant Pot and stir to combine.
- Press "Keep Warm/Cancel" twice - your Instant Pot should now be in Keep Warm mode.
- Continue to heat on "Keep Warm" mode, uncovered, for 10 minutes, stirring occasionally.
- After 10 minutes, turn the Instant Pot off. Stir in parsley, and serve.

I love chicken and dumplings but I prefer to make the dumplings using a baking mix. Would the recipe work the same? Also, seems like it is more time consuming in “hands on time” than just stove top.

The recipe should work the same with a different dumpling recipe, you just may need to adjust the cook time for the dumplings to make sure they are done. The amount of time it takes depends on your recipe and what you have time for. I like the Instant Pot because there is a lot of “hands off” time while it is coming up to pressure, cooking, and then coming down from pressure. But, you’re right, some of the Instant Pot recipes do cook faster on the stove when you consider how long it takes for the Instant Pot to come up to pressure and then cool off again. It’s all in what you like, what you have time for, and what you want to play with in the kitchen!

Agreed.. I’m a bit disappointed that they advertise “quick cooking” without mentioning at all how long it takes for the Instant Pot to pressurize the depressurize. Mine takes a solid 20-30 minutes to pressurize and depressurize on quick release. That’s an hour by itself.

Since there is no cover on for the dumplings, can the dumplings and liquid be doubled? Will not rate at this time, I haven’t made it yet.

I haven’t tried it with extra liquid and dumplings. It *should* work – my only caution would be that over-crowding with the dumplings could make them stick together and not cook through. So start with a few extra and see how it goes!

I just started using my Instant Pot. The only thing I’ve made so far is “roast pork.” First I saute it then I used the pressure cooker option. It comes out great! I will definitely try the chicken & dumplings. I plan to also add some chopped carrots & peas, maybe a little celery & onion, too. As I’m just learning to cook w/ the Instant Pot, I may cook the veg separately then throw ’em in at the end…
