Peaches are one of our favorite summer fruits. This fun “salad” is a great way to use lots of peaches when they’re in season in the summer. And since peaches are available in the grocery store all year long, you can enjoy this taste of summer whenever you want!
Do I Have to Grill the Peaches?
Yes, you can use “raw” peaches in this salad. You don’t need to grill them first. Grilling peaches brings out an extra sweetness to the fruit that just adds something special to this recipe. If you haven’t grilled peaches before, I’ve got the how-to for you right here. It’s easier than you think!
I made a big batch of this salad during our county fair week, with the intention of taking it in so the fair board would have something to eat that was not fried at a food booth. But it was so good, the bowl never made it to the fair, I ate it all myself!
I cut my peaches into quarters before grilling them. After they came off the grill (and cooled a little bit so I could handle them), I sliced each quarter into 2 or 3 pieces. That way the peach slices were about the same size as the sugar snap peas. I left the skin on the peaches, but after they are grilled the skins come off very easily if you want to take them off.
I love this salad when the peaches are still warm. It melts the Feta cheese just a little bit so it has a nice creamy texture. It’s also delicious cold… right out of the bowl… in front of the open refrigerator… Or so I hear…
Enjoy!
