This salad is so darn simple, you’ll want to buy up all the watermelon you can find!

We all know that we are supposed to eat more fruits and vegetables. But salads are just no fun when they are the same every time – lettuce, cucumber, tomato, and maybe a crouton or two if you’re feeling really fancy. This Watermelon Feta Salad is different – packed with fun flavors, and so refreshing at the end of a long day. It’s perfect for a summer picnic, a potluck, or a simple side dish anytime.

Ideally, you’ll start with seedless watermelon. But I only had seeded watermelon. I thought about taking all the seeds out of the watermelon as I was cutting it up, but let’s face it, ain’t nobody got time for that! This salad will be a little harder to eat, but it will still be delicious.

When you’re tossing the salad, I recommend using a soft silicone spatula like this one. A hard plastic or wooden spoon could crush the watermelon or Feta cheese and you’ll end up with a soupy mess.

And I know what you’re thinking – cheese? Feta cheese? With watermelon? The tartness of the Feta sets of the sweetness of the watermelon perfectly. There isn’t that much Feta in this salad, and if you really don’t like it you can use less.

If you want to really step out of the box, add 1-2 Tablespoons of chopped fresh mint, too. (Use these herb scissors to chop the mint lightning fast.)

Last tip – mix the watermelon and cucumber together ahead of time, but don’t add the Feta cheese and mint until right before you’re ready to serve it. If you add the Feta early, it will still taste fine, but the Feta will start to crumble even more and will look messy.

Ingredients
  

  • 4 cups watermelon cubed
  • 1 cucumber peeled and sliced into bite-size pieces
  • 6- ounce container crumbled Feta cheese
  • Optional: 1-2 Tablespoons chopped fresh mint chop it quickly with these herb scissors

Instructions
 

  • In a large bowl, combine cucumber and watermelon. Cover and refrigerate until just before serving.
  • When ready to serve, add Feta cheese and mint (if using). Gently toss with a soft silicone spatula.
  • Serve immediately.
