I love to grill. So much, that I thought about starting a grilling-only website for a while! (What do you think? Do you want to see more grill recipes? Leave me a comment below and let me know!) But at the time I had an 18-month-old son, and I knew that spending a lot of time developing recipes for the grill was going to be a challenge. Now that he’s older, I’m back at the grill and loving it!
I do grill chicken breasts sometimes, but I prefer to cook chicken thighs on the grill. Not sure what the difference is? Find out more here. Chicken breasts are a little harder to grill well… they are so thick that they can get dried out on the outside before the inside is fully cooked.
But chicken thighs, on the other hand, are perfect for the grill! They are pretty flat, so they don’t need to cook very long. And the dark meat seems to hold the moisture better than the leaner white meat of a chicken breast. If you’re just getting started with your grill, chicken thighs are a great way to practice!
How to Handle Boneless, Skinless Chicken Thighs
I buy boneless, skinless chicken thighs in bulk at the grocery store. Each piece of meat comes sort of rolled up in a tube. The chicken thighs cook best if you unroll them first. Then you can get at all the nooks and crannies with seasoning, and the meat is a nice uniform thickness, perfect for grilling!
And since I buy them in bulk, I always have more than I need to cook at one time. Sometimes I’ll cook a big batch at once and freeze them for a quick meal later. Most of the time I divide the big package up into smaller Ziploc freezer bags. That way I can grab a bag out of the freezer, and it’s just the right amount of chicken to cook for our family.

Grilled Garlic-Basil Chicken Thighs
Ingredients
- 2 pounds boneless skinless chicken thighs
- 2 Tablespoons garlic powder
- 2 Tablespoons dried basil
- 4 teaspoons dried rubbed sage
- 1 teaspoon salt
Instructions
- Unroll chicken thighs and place on a large platter or cutting board.
- In a small bowl, combine garlic powder, basil, sage, and salt. Mix well.
- Using your fingers, rub the spice mixture into both sides of the chicken.
- Preheat the grill to high.
- Place the seasoned chicken thighs on the hot grill.
- Grill over high heat for approx 3-5 minutes per side, until the meat measures 165 degrees F in the center with a meat thermometer.
- Let rest for 1-2 minutes before serving.
