We grow a lot of blackberries on our farm, and love to cook with them! But after a recent mess I made while I was making blackberry jelly… I was looking for a less messy way to use these delicious blackberries.

Our Slow Cooker French Toast and our Slow Cooker Blueberry French Toast are always favorites, so I thought I would try it with blackberries, too! This recipe has been a big hit around here, and I know it will be in your family, too.

I used fresh blackberries to make this recipe, but you could also use frozen blackberries. Just let the blackberries thaw before you use them. (Overnight in the refrigerator should be just about right.)

Blackberries do tend to be a little tart, and even with all the sugar in this French toast, it still was a little tart. But that’s what maple syrup is for, right? You can either pour on some real maple syrup, dust your Blackberry French Toast with granulated sugar or powdered sugar, or add a dollop or two of Easy Homemade Whipped Cream. (I’ve heard it’s also good with Easy Homemade Vanilla Ice Cream…) Or just enjoy the summery tartness of the blackberries!

Slow Cooker Blackberry French Toast

Ingredients
  

  • 1 loaf French bread
  • 6 eggs
  • 2 cups milk
  • 2 teaspoons pure vanilla extract
  • 3 cups blackberries if using frozen, thaw first
  • 1 cup sugar
  • Optional: real maple syrup powdered sugar, or whipped cream for topping

Instructions
 

  • Cut French bread into 1-inch cubes and place in a large bowl.
  • In a separate bowl, combine eggs, milk, and vanilla. Whisk well to combine.
  • Pour egg mixture over bread cubes and toss to coat.
  • In another bowl, mix blackberries with sugar. Toss to coat well.
  • With a silicone scraper, gently fold blackberries into the bread mixture.
  • Lightly grease a 6-quart slow cooker.
  • Transfer bread mixture to slow cooker.
  • Lay several layers of paper towels over the top of the slow cooker, then cover with the lid.
  • Cook on high for 2.5-3 hours.
  • Let sit, uncovered, for 5 minutes before serving.
