How do you make mornings great? Have a delicious breakfast waiting for you when you wake up! There are so many amazing things in this recipe – summer blackberries, steel-cut oats, and a slow cooker!
I love to make this oatmeal in the summer when we have fresh blackberries. If you aren’t a “hot breakfast in the summer” kind of person, freeze some blackberries and use them later in this delicious oatmeal. It really does taste like blackberry cobbler!
You do need to use steel-cut oats in any slow cooker oatmeal recipe. Don’t use the “cooks in 5 minutes” version of steel-cut oats – it has to be the real thing! If you use instant oats, old-fashioned oats, or even quick-cooking steel-cut oats, you’ll have a mushy mess in the morning. Do yourself a favor and use regular steel-cut oats.
You also need to set your slow cooker up just a little bit different for this recipe. You can just put all your ingredients in the slow cooker, cover, and turn it on. But then your oatmeal will most likely burn. Using your slow cooker as a double boiler helps the oatmeal to cook without burning. Put a glass (or other heat-resistant) bowl inside your slow cooker – it needs to fit all the way inside, and the lid of the slow cooker needs to close completely. I use the largest bowl from this set and this slow cooker.
Then pour water inside the slow cooker crock, but outside the bowl. The water should reach about halfway up the sides of the bowl. I use around 6 cups of water in mine.
Then just cover it up, turn it on, and go to bed! Breakfast will be ready when you are! (Bonus points if your coffee maker has a timer and is also ready when you get up!)
The blackberries tend to stay on top of the oatmeal while it’s cooking. Give it a gentle stir to mix the blackberries in the oatmeal when it’s done. The berries will break up into small pieces and give your oatmeal a delicious purple color! Top it with extra fresh blackberries or more sugar, and you’re done.
Enjoy!
