Blackberries are such a great summer fruit! They can be a bit tart, so they aren’t always my favorite to eat by themselves as a snack. But in this bread, they are so yummy! Have it for breakfast or brunch, an afternoon pick-me-up snack, or even a late-night dessert!
This is a pretty simple quick bread recipe. (Like this Cinnamon Bread or this Zucchini Oat Bread.) I like big chunks of blackberries in the bread, so I just used a potato masher to lightly mash the berries before I added them to the batter mixture. If you want smaller berry pieces, you can pulse them in a food processor or blender first. No matter how little you mash them, the juice from the blackberries will turn your bread batter a bit purple!
You can use fresh blackberries if you can get your hands on them during the summer. If you don’t have access to fresh blackberries, frozen berries will work just as well. Just thaw them first (overnight in the refrigerator should be just right).
Make up the brown sugar topping after you pour the batter into your loaf pan. It will seem like there is a lot of topping, but you’ll definitely want to use it all! The sweet topping helps to counter some of the tartness of the blackberries. But it can also make the top of the bread get pretty brown, so be sure to check the bread after about 40 minutes of cooking. Loosely cover the top of the bread pan with aluminum foil if the top is getting too brown before the inside is getting done.

Blackberry Bread
Ingredients
- 2 cups all purpose flour
- 1/2 cup sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs lightly scrambled
- 1-1/4 cup milk
- 1/4 cup butter melted
- 1 Tablespoon pure vanilla extract
- 1 cup blackberries fresh or frozen, thawed, lightly mashed
Topping:
- 3 Tablespoons all-purpose flour
- 3 Tablespoons brown sugar
- 3 Tablespoons cold butter
Instructions
- Combine flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a small bowl, whisk together eggs, milk, butter, and vanilla.
- Pour wet ingredients into dry ingredients, and mix until just combined.
- Fold in mashed blackberries.
- Pour batter into lightly greased9"x5" loaf pan.
- Place flour, brown sugar, and butter for the topping in a small food processor. Pulse until all ingredients are combined, and mixture looks like coarse crumbs.
- Evenly sprinkle topping over unbaked bread.
- Bake at 400 degrees for 45-60 minutes, until the top is brown and a toothpick inserted in the center tests clean. Check bread after 40 minutes, and loosely cover with aluminum foil if the top is getting too brown.

Blackberry bread says to add scrambled eggs. Do you mean whisked or is it really scrambled?
