Quick and Easy Blackberry Cobbler

This Quick and Easy Blackberry Cobbler is a family-favorite recipe. We make it as soon as we can get fresh blackberries, and just can’t get enough!

Quick & Easy Blackberry Cobbler

One of the perks of having tame blackberry bushes on our farm is that we have plenty of big, juicy blackberries for the summer. The drawback is that they all come ripe within about 3 weeks, and we have to figure out what to do with them before they go bad!

This Quick & Easy Blackberry Cobbler is so easy to put together, and it is so good… it tastes just like summer! Start with 4 cups of fresh blackberries. (If you don’t have fresh berries, you can use frozen blackberries. Just let them thaw in the refrigerator overnight first.) Put the berries and sugar in a large saucepan over medium heat. Stir it all up, and let it heat for about 5 minutes, until the fruit is hot.

While you’re waiting on the fruit to get ready, mix up the biscuit topping. Just toss everything else in an electric mixer, and mix it on low until all the ingredients are combined.

When everything is ready, pour the fruit into a 9″ x 9″ pan. Spoon the biscuit topping out evenly over the blackberries. And then pop it in an 375 degree oven. How much easier can it get?

Ingredients
  

  • 4 cups blackberries
  • 2-1/2 cups sugar divided
  • 1-1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1 egg
  • 2 Tablespoons vanilla
  • 3/4 cup butter melted

Instructions
 

  • Place the blackberries and 1 cup of the sugar in a large saucepan. Heat over medium heat, stirring occasionally, until berries are warmed through and sugar is dissolved. (about 5 minutes)
  • In an electric mixer, combine flour, 1-1/2 cups sugar, salt, egg, vanilla, and melted butter. Mix on low until combined.
  • Pour blackberry mixture into a 9"x9" pan.
  • Spoon batter mixture on top of berries.
  • Bake at 375 degrees for 50-60 minutes, until top is golden and topping is cooked through.

    This looks so yummy, and I love that it’s quick to make. Now that I live out here in the country, I have discovered lots of blackberry bushes lining the far back of my property. This recipe is going to come in very handy! I can’t wait to try it!

    We love this cobbler, and make it a LOT over the summer! Just watch out for the thorns when you’re picking your berries!

    I do use 2 Tablespoons of vanilla in this cobbler. If you don’t think you want quite that much vanilla flavor, you can always start with 1 Tablespoon and try it!

    The finished product in the video looks quite different from the one on the original picture. Is this because you used more topping?

    Great question, Sharon. I used the same recipe for the photos and the video, but I cooked them at different times. As you know with cooking, not everything comes out exactly the same way every single time! If you like your cobblers with a little less topping, the topping in this recipe can be cut in half.
