It seems so decadent, doesn’t it? Homemade Strawberry Shortcake… like you spent hours slaving over the stove to get the perfect shortcakes… Don’t tell anyone, but it doesn’t have to be that hard!

The hardest part about these Strawberry Shortcakes is cutting the butter into the dough. And with the tricks I teach you in this post, you’ll have that part down in no time!

For me, the other hardest part is keeping my toddler out of the strawberries until we’re ready to eat the shortcakes… but that’s not such an awful problem to have!

You’ll need two mixing bowls, a pastry blender, a few measuring spoons, a fork, and a baking sheet. The shortcakes should take 20 minutes or less to put together, and only about 15 minutes to bake. Sit down, relax, and let your family think you slaved over the oven all day long!

Make this with strawberries, use blueberries, use blackberries, use them all if you want! I like to use Easy Homemade Whipped Cream, but the store-bought stuff is good, too. (I never knew how simple it is to make Homemade Whipped Cream! If you have an electric mixer, you can do it!)

Strawberry Shortcake

Ingredients
  

  • 1-1/2 cups all purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup butter cold, sliced
  • 1 egg beaten
  • 1/2 cup Greek yogurt
  • 1 Tablespoon vanilla
  • 1 Tablespoon milk
  • 4 cups strawberries sliced
  • 3 Tablespoons sugar
  • Whipped cream
  • Optional: blueberries and extra strawberries for garnish

Instructions
 

  • Combine flour, 1/4 cup sugar, baking powder, baking soda, and salt in a large, shallow mixing bowl.
  • Using a pastry blender, cut in butter until mixture resembles coarse crumbs. (Get tips here.)
  • In a small bowl, combine egg, yogurt, vanilla, and milk.
  • Pour liquid ingredients into dry ingredients. Stir with a fork, until ingredients are just combined.
  • Drop shortcake batter into 6 mounds on a greased baking sheet.
  • Bake at 400 degrees for 13-16 minutes, until golden brown.
  • Remove from oven and let cool on the baking sheet for 3-5 minutes. Move shortcakes to awire rack to cool completely
  • While the shortcakes are baking, combine sliced strawberries and 3 Tablespoons sugar. Toss to coat strawberries, and refrigerate until use.
  • When the shortcakes are cool, cut in half with a knife. Layer bottom half of short cake, strawberries, whipped cream, and top with shortcake. Garnish with extra berries and whipped cream.

    This reminds me so much of my Father-in -laws version of Strawberry Shortcake! He has Alzheimers now and so his version is lost to us, sadly. I think I will pass this recipe to my sister in law to make for him! Thank you for sharing it at #Celebrate365 Blog party!
