Summer is a crazy time for us, like it is for every other family. In addition to normal fun summer things, we also have lots of hay to harvest and a county fair to put on.
The Gibson County Fair has been an important part of our family since John was in 4-H as a kid. He grew up in 4-H, showing animals, and that’s how our farm started. He has been on the Fair Board for longer than I have known him, and that means that he spends a lot of his spare time at the fairgrounds. He helps with maintenance on the large grounds all year long. The two weeks leading up to the fair are amazingly busy, finishing up last minute details to get the fairgrounds ready to serve 2000-4000 people every night for a week. The week of the fair, John practically lives at the fairgrounds. He helps get set up for the events that happen every night, helps to run the 4-H shows, and puts out any fires that happen during the day.
Our son loves being at the fairgrounds, too! He loves to ride the carnival rides (now that he’s big enough). But I think he likes “pretend riding” on all the antique tractors on display even better.
It’s a lot of fun walking through the 4-H barn. We love to look at the animals and talk to the families who put so much time and energy into raising them.
And, of course, the fair food. Who doesn’t love fair food? Ice cream on a stick was a big hit this year!
Ice cream is great any time, not just at the fair! And this Homemade Double-Mint Ice Cream is so refreshing after a long hot day working outside!

Homemade Double-Mint Ice Cream
One word of warning… this stuff is minty! We love mint flavor, so I used plenty of mint extract in this recipe. If you’re not that crazy about mint, you might want to cut that in half the first time you make it. You can always add more next time. (Because you are definitely going to want to make this ice cream again!)
I used Andes Creme de Menthe baking pieces in this ice cream. I love them, because they are already broken up into the perfect size pieces for ice cream. If you can’t find the baking pieces, you can use whole Andes mint candies. Just unwrap them, stick them in a Ziploc bag, and hammer away. (A food processor will work too, but you won’t get the fun of smashing stuff then.)
I like my ice cream to be frozen a little harder than an ice cream maker will get it. When it’s finished freezing in the ice cream maker, I transfer the ice cream into one of these Tovolo ice cream tubs. Pop that in the freezer for a few hours, and you’re ready to go!
Just to clarify – there is absolutely nothing wrong with eating the ice cream right out of the ice cream machine. Sometimes I just can’t wait!

Homemade Double-Mint Ice Cream
Ingredients
- 3/4 cup sugar
- 1/8 teaspoon salt
- 2 cups whole milk divided
- 1 Tablespoon vanilla extract
- 1 teaspoon mint extract use 1/2 teaspoon for a less strong mint flavor
- 1 cup heavy cream
- 1 cup Andes Creme de Menthe Chocolate Mint baking chips or use wafers, finely chopped
Instructions
- In a medium bowl, whisk together sugar, salt, and 1 cup of the whole milk. Mix until the sugar is dissolved.
- Add the vanilla, mint, the rest of the whole milk, and the heavy cream. Stir to combine.
- Assemble and turn on ice cream maker, according to manufacturer's instructions.
- Pour the ice cream mix into the ice cream machine and let churn.
- When ice cream is nearly finished (about 10-12 minutes), add in mint candies. Let finish churning (total of 15-20 minutes).
- Serve immediately, or store in freezer-safe containers.

This is our go to ice cream. Someone may have the answer to this? Why is it that you can only buy peppermint ice cream around the Thanksgiving and Christmas holidays? I have asked three ice cream mfg’ers and none have ever replied back to me.
I always want peppermint ice cream in the summer months! I wish you could buy it more than just at the holidays. I can’t say for sure, but I would guess that peppermint ice cream is just a “seasonal” product… they probably don’t get as much demand for it, except around the holidays, to make it worthwhile to produce it all year long. I’m with you, though, what a bummer!
