With a milk-hungry toddler in the house, we always use up milk before the sell by date. But every once in a while, we get close. If you don’t use up an entire container of milk before it goes bad, you can freeze it!

Freezing is a great way to use up any extra buttermilk you might have. I love making pancakes and biscuits with buttermilk. But buttermilk is always sold in bigger volumes than I need to make one batch of pancakes. Freezing the extra buttermilk is a great way to reduce waste and keep some on hand for a pancake emergency.

You can freeze milk in any freezer-safe container. Because milk is mostly water (like broth), it will expand a bit when it freezes. Make sure to leave some room in the container for expansion, or you’ll have a big mess on your hands.

The easiest way to freeze milk is in ice cube trays. The trays stack and don’t take up a lot of room in the freezer. Even better, once the milk is frozen (just overnight), you can transfer the cubes into a Ziploc freezer bag for even easier storage. As you’re filling the trays, measure how much milk will fit in one ice cube section (mine fit about 2 tablespoons). When you’re ready to use them, just take out as many cubes as you need, let them thaw, and you’re ready to use your frozen milk.

As long as it was stored properly, kept frozen, and kept cool while it was defrosting, milk is safe to drink or cook with after it has been thawed.

When you thaw milk, it sometimes has a slightly different consistency than fresh milk. It may be a little grainy, instead of the smooth texture you’re used to. Thawed milk is great for cooking or baking, when the consistency doesn’t matter quite as much. Shaking the thawed milk or stirring vigorously should return the milk close to it’s normal consistency, so it can be used on cereal or to drink.
