T-Bone Steak with Compound Butter

There is really nothing like a good steak on the grill. A good steak should have plenty of flavor all on its own. But a little bit of compound butter can give it just that extra kick of flavor that takes a steak from good to great.
I started with some big, juicy, tasty T-bone steaks. (They are John’s favorite.) Ours are cut pretty thick, so it does take a few extra minutes to get them grilled to perfection. You’ll want to grill on high heat, with the goal of only flipping the meat once. (That’s what gives you beautiful grill lines on your steak.) I cooked these for about 4 minutes per side, but if your steaks aren’t quite so thick, or if you want them a little more done, you’ll need to adjust your cooking time. Earlier in the day, I made up this easy compound butter. I softened a stick of butter in the microwave and mixed in some seasonings (I used dried seasonings because that is easier to grab, but you could use fresh, too). I wrapped the butter up tightly in plastic wrap and put it back in the refrigerator. Within an hour, the butter was firm again.
After the steaks come off the grill, you’ll want to let them rest for 3-5 minutes. I leave them on a big plate, and very loosely cover them with aluminum foil. (Make a big tent with the foil, and drop that over the plates. You don’t want the meat covered tightly, just enough to keep the steaks from cooling down too much.) I put a big slab of compound butter on the steaks as they were resting, and then a little more on before I served them.
While the steaks on their own were amazing, the extra bit of flavor from the seasonings in the butter really sent them over the edge. We will definitely be using this compound butter again on steaks, and other meat, too!

T-Bone Steak with Compound Butter
Ingredients
- 2 T-bone steaks approximately 14-16 ounces each
- 1/2 cup 1 stick butter, softened
- 1 Tablespoon Italian seasoning
- 1/2 teaspoon garlic powder
Instructions
- Make compound butter: In a small bowl, mix Italian seasoning and garlic powder with softened butter. (Butter must be very soft to mix.)
- Transfer butter to plastic wrap. Tightly wrap butter in plastic wrap.
- Refrigerate butter for at least one hour, or until firm.
- Grill steaks over high heat for 4-7 minutes per side, until cooked to desired doneness. Follow these tips for the perfectly cooked steak. (Ideally, only turn steaks once during cooking.)
- Remove steaks from grill and place on large plate. Add 1 Tablespoon compound butter to each steak. Loosely tent with aluminum foil and let steaks rest for 5 minutes.
- Add more butter to steaks before serving, if desired.
