I am always looking for one-dish, warm, and filling meals that (of course) I can throw together in a jiffy. These Slow Cooker Ham & Ranch Potatoes from “303 Simple & Satisfying Recipes” from Gooseberry Patch are just that!
If you ask me, this is a full meal, not just a side dish. (It’s because of the ham.) So I’m content to eat this for dinner. But, if you really need something else to go along with it, make yourself a big green salad (because we all need to eat more veggies), or grill up a nice steak or pork chop.
By the way, this dish also tasted great right out of the refrigerator the next day. So think about this recipe the next time you need a potato salad! The extra flavor with the ham and cheese gives it that something extra, so it’s one step up from “boring” potato salad.
And did I mention that this cooks up in your slow cooker? No boiling potatoes and dealing with that scalding water! Hooray! Chop everything up (do yourself a favor and buy a package of chopped ham to cut off some prep time), mix the dressing ingredients, toss it in your crockpot, and forget about it until dinner time!

Slow Cooker Ham & Ranch Potatoes
Ingredients
- 2 pounds redskin potatoes peeled and quartered
- 8- ounce package reduced-fat cream <g class="gr_ gr_68 gr-alert gr_gramm gr_run_anim Punctuation only-del replaceWithoutSep" id="68" data-gr-id="68">cheese </g> softened
- 1- ounce package buttermilk ranch salad dressing mix
- 10-3/4 ounce can cream of potato soup
- 16- ounce package cooked ham cubed
- 1 cup shredded Cheddar cheese
- salt and pepper to taste
Instructions
- Place potatoes in a 6-quart slow cooker.
- In a bowl, combine cream cheese, dressing mix, and soup; mix well.
- Add cream cheese mixture to slow cooker and mix with potatoes.
- Cover and cook on low for 6-1/2 hours.
- Stir in ham, salt, and pepper. Top with cheese. Cover and cook for another 15-30 minutes until cheese is melted.

Wonder how this would work with turkey? Probably still yummy; white meat is white meat, right?
