This recipe is exactly what I’m talking about when I talk about being fearless in the kitchen. I saw a bag of peppermint flavored marshmallows on one of the end caps at my grocery store. I didn’t have anything planned to do with peppermint marshmallows, but everybody in my family loves this flavor. And my toddler is currently obsessed with marshmallows. So I knew I had to buy them!
I had to experiment with the peppermint marshmallows to get these Peppermint Rice Krispie Treats just right. And there is nothing wrong with experimenting in the kitchen – that’s what cooking is all about! I tried with all peppermint marshmallows and lots of crushed peppermint candies. I tried with less peppermint candies. I tried with less peppermint marshmallows and some regular marshmallows. I tried with more butter. I tried with less Rice Krispies and with more Rice Krispies.
I finally landed on what I thought was the “right” recipe… with just the right amount of gooeyness and stretchiness, and just the right amount of peppermint flavor.
The beautiful thing about experimenting in the kitchen is that you’ll start to learn what your family likes (and what they don’t like). You’ll also start to figure out what goes well together and what doesn’t, and what happens when you tweak this little thing or that little thing. And then it’s easier the next time!

Tips for Peppermint Rice Krispie Treats:
- Use unsalted butter instead of salted butter.
- Use a freezer bag to crush your peppermints. Freezer bags are thicker than regular storage bags, and won’t tear as easily.
- Be sure to use a large enough pan. You’ll be doing a lot of stirring, and you want to have plenty of room. Otherwise you’ll make a big mess. I like this 7 quart Dutch oven, it has plenty of space.
- Put the peppermints in the bag, and put them on the floor. Give your toddler a meat tenderizer, and let him go to work! He’ll think he’s helping, he’ll get to bang on something, and he’s helping you. Everybody wins! (Just make sure he used the flat side, not the pointy side.)
- Use a silicone spatula for all the stirring instead of a spoon. The marshmallow will stick less, and it’s easier to press into the pan.

Peppermint Rice Krispie Treats
Ingredients
- 4 Tablespoons unsalted butter
- 10 ounce bag mini peppermint marshmallows
- 1 cup regular mini marshmallows
- 15 peppermints crushed
- 4 cups Rice Krispies cereal
- Optional: sprinkles
Instructions
- Lightly spray an 8x8 pan with cooking spray, set aside.
- In a large saucepan (I like this 7 quart Dutch oven) over low heat, melt butter.
- Stir in peppermint marshmallows and regular marshmallows and heat on low (stirring frequently) until melted.
- Unwrap peppermints and place in a Ziploc freezer bag. Hit mints with a hammer or meat tenderizer to crush.
- When marshmallows are melted, remove saucepan from heat and stir in crushed peppermints.
- Add Rice Krispies and gently stir until well coated. (I prefer a spatula instead of a spoon.)
- Gently press Rice Krispies mixture into the greased 8x8 pan.
- Top with sprinkles, if desired. Gently press sprinkles down onto surface of Rice Krispies.
- Let sit at room temperature for 15-30 minutes to cool. Cut into pieces and serve.
- Wrap leftovers in an air-tight container and store at room temperature for 1-2 days.
