We made some Mini Pancake Muffins not too long ago, and they were such a hit, I knew we needed to try a variation on them. And so these Apple Cinnamon Pancake Muffins were made! The apple, cinnamon, and maple flavors are perfect for a lazy breakfast on a cool fall weekend, or for a grab-and-go breakfast on a busy weekday.
This recipe was inspired by one in “Mom Knows Best” by Gooseberry Patch. The original recipe was one big pancake, baked in a cast iron skillet. I have trouble cooking in cast iron sometimes, and I know not everybody has cast iron just hanging around their kitchens. So I adapted this recipe to be 12 adorable pancake muffins! Now all you need is a regular muffin pan, and you’re ready to go!

The first step is to chop an apple into bite-size pieces. (Check out this post for some tricks on how to quickly chop an apple.) Then toss the apple with a little bit of lemon juice, maple syrup, and cinnamon (see the printable recipe card below for the full recipe). The maple syrup and cinnamon are for flavor. The lemon juice is to keep the apple from turning brown after it’s cut.
Did you know that there is a variety of apples that doesn’t turn brown after they are cut? They are called Arctic Apples. If you can find Arctic Apples, you won’t need to add the lemon juice!
Make an easy batter with Bisquick, and you’re off to the races! Drizzle the muffins with warm maple syrup and a bit more cinnamon if you’re staying home, or just wrap a couple up in a napkin if you’re heading out the door.
Bake them the night before, and heat them up quickly in the microwave for an even faster start to your morning!

Apple Cinnamon Pancake Muffins
Ingredients
- 1 large apple I used a Honeycrisp apple
- 2 Tablespoons real maple syrup
- 1 Tablespoon lemon juice
- 1 teaspoon cinnamon
- 2 cups Bisquick baking mix
- 2 eggs
- 1 cup milk
- 1 Tablespoonvanilla
- Optional: Additional maple syrup
Instructions
- Peel and core apple, chop into bite-size pieces.
- In a small bowl, toss apple slices with maple syrup, lemon juice, and cinnamon. Set aside.
- In a medium bowl, whisk Bisquick, eggs, milk, and vanilla until smooth.
- Spray the cups of a muffin pan with baking spray.
- Evenly divide the apples in the bottom of the muffin cups (about 1 Tablespoon apple pieces in each cup).
- Pour the pancake batter over the apples in each muffin cup. Fill the cups almost to the top.
- Bake at 350 degrees for 15-18 minutes, until the pancakes are set.
- Serve immediately with warm maple syrup.
