I used a Honeycrisp apple

Tablespoons
real maple syrup
1
Tablespoon
lemon juice
1
teaspoon
cinnamon
2
cups
Bisquick baking mix
2
eggs
1
cup
milk
1
Tablespoon
vanilla
Optional: Additional maple syrup
Instructions
Peel and core apple, chop into bite-size pieces.
In a
small bowl
, toss apple slices with maple syrup, lemon juice, and cinnamon. Set aside.
In a
medium bowl
, whisk Bisquick, eggs, milk, and vanilla until smooth.
Spray the cups of a
muffin pan
with
baking spray
.
Evenly divide the apples in the bottom of the muffin cups (about 1 Tablespoon apple pieces in each cup).
Pour the pancake batter over the apples in each muffin cup. Fill the cups almost to the top.
Bake at 350 degrees for 15-18 minutes, until the pancakes are set.
Serve immediately with warm maple syrup.
