Corn bread is one of those breads that is just so easy to make. The stuff right out of the little box from the grocery store is great. (Yes, you know what I’m talking about. I have some in my pantry right now, too!) But it really isn’t that hard to make your own corn bread from scratch!
With this recipe, you even add in some actual corn, instead of just corn meal. It gives your corn bread a little more body and a little more flavor. I use corn meal, all purpose flour, and cream-style corn to make this corn bread a little extra special.
If you want a really special corn bread, give this Cheesy Broccoli Cornbread a try. It’s a great way to add an extra veggie to your meals!
If you aren’t so sure about adding in the broccoli, don’t worry. Stick with this twist on the classic and go with the Quick & Easy Corn Bread recipe below. (But you should definitely give the broccoli one a try sometime soon!)
This is not a dry, crumbly corn bread. This Quick & Easy Corn Bread is more dense and more moist than you might be used to. And that makes it perfect to crumble up and toss on top of chili or soup!

Quick and Easy Corn Bread
Ingredients
- 1 egg lightly beaten
- 1/2 cup milk
- 1-15 oz can cream-style corn
- 1 cup corn meal
- 3/4 cup all purpose flour
- 4 Tablespoons sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup 1/2 stick butter, melted
Instructions
- In a small bowl, combine egg, milk, and corn.
- In a large bowl, combine corn meal, flour, sugar, baking powder, and salt.
- Pour liquid ingredients into dry ingredients and mix until just combined.
- Melt butter in the microwave (use a microwave-safe container). Pour melted butter into batter and mix to combine.
- Pour batter into a greased 9x9 pan. Bake at 400 degrees for 20-30 minutes, until the edges of the bread are golden brown and a knife inserted in the center of the bread comes out clean.
- Allow to cool for 5-10 minutes. Slice and serve while still warm.
