Cheesy Broccoli Cornbread

This Cheesy Broccoli Cornbread recipe is so easy and fast to make. And it’s a great way to get an extra vegetable on your plate!

I struggle with side dishes. Most weeks, I get a meal plan all set – with my main courses. And I forget about planning anything other than the main attraction. So if it’s not a one-pot meal complete with veggies, I’m usually scrambling for some sort of side dish at the last minute. When I found this recipe for Cheesy Broccoli Cornbread in Gooseberry Patch’s “Almost Homemade,” I knew I had to try it.

While I usually make our cornbread from scratch (it’s really pretty easy), I do keep a stash of pre-packaged cornbread mix in our pantry. It comes in handy for those nights that I forget about cooking, or for easy “almost” homemade recipes like this!

This Cheesy Broccoli Cornbread is so easy to put together – mix all the ingredients up, toss it in the oven, and get it 30 minutes later. This recipe uses frozen broccoli. Since this is a fast-cooking bread, you will definitely want to cook the broccoli first. No need to thaw it, just open the bag, put the broccoli in a microwave safe steamer (like this one), add a little water, and microwave according to the package directions. Drain out the water and add the cooked broccoli to the cornbread mix. You could use fresh broccoli too, just be sure to cook it first.

I chopped a whole onion to put in this cornbread. We had this cornbread with this amazing ham recipe from my friend Cris at Recipes That Crock. The ham was pretty sweet, and Farmer Doc and I both thought the cornbread had a little too much onion flavor. But when we had the cornbread leftovers, the onion didn’t seem quite so overpowering. Different pairing? Flavors mellowed out in the refrigerator? You might want to cut down to 1/2 of an onion, if you’re not crazy about onion flavor.

One of the best things about this Cheesy Broccoli Cornbread? It’s a bread and a vegetable all in one! Use this as a way to get a few extra veggies on your plate!

Ingredients
  

  • 1/2 cup 1 stick butter, melted
  • 1/2 to 1 onion chopped
  • 12- ounce package frozen broccoli cooked and drained
  • 4 eggs beaten
  • 1/4 cup buttermilk
  • 8 ounce package shredded Cheddar cheese
  • 8.5 ounce package cornbread mix

Instructions
 

  • Pour melted butter into a large bowl. Add onion, broccoli, eggs, buttermilk, and cheese. Mix well.
  • Stir in cornbread mix until combined.
  • Spoon into a greased 13"x9" baking pan.
  • Bake at 375 degrees for 25-30 minutes.
