I never used to like broccoli salad. Something about mayonnaise all over broccoli just didn’t seem that tasty to me. Then my friend Katie made this Broccoli Salad (with bacon!) for a party, and I was hooked. I tweaked the recipe just a little bit, and just knew I needed to share it with you!
This broccoli salad doesn’t have any mayonnaise. Instead, I used plain Greek yogurt! Most of these salads use mayonnaise, sugar, and a little bit of vinegar. The Greek yogurt has enough tartness to it that it doesn’t need the vinegar. Just Greek yogurt and sugar!
Add in real bacon bits, and you’ve got a veggie salad that will be the hit of any summer picnic or holiday potluck!
You could definitely cook your own bacon, crumble it, and add it to this salad. That would actually make this Broccoli Salad even better. But to make things easy (and I love ways to make things easier in the kitchen!), just grab a bag of bacon bits from the grocery store.
I also used the washed, ready-to-eat, bagged broccoli and cauliflower. If you want, you can use 1 head of broccoli and 1 head of cauliflower and do all the cleaning and chopping yourself. But it was so much easier to just use the ready-to-eat stuff! I did chop the florets into smaller pieces, but the hard work was already done for me. And that’s a win no matter how you make it happen!
Enjoy!
