Individual Chocolate-Peanut Butter Bars

We are always looking for tasty desserts around here. But I just don’t make them very often. Sometimes it just seems like too much effort at the end of the day. Also, I really don’t need to eat dessert all the time! But when you put chocolate and peanut butter together in a single-serving size portion, you’ve really found my weak spot!

I found the recipe for these Chocolate-Peanut Butter Bars in “Almost Homemade” by Gooseberry Patch. They are “almost” homemade because they do start with a cake mix… but that means they are so easy to make!

These Chocolate-Peanut Butter Bars have 4 ingredients – a cake mix, oil, eggs, and peanut butter chips. I swear, that’s it. So easy! I used canola oil in these bars. Don’t know which oil to pick? Check out this post for some help in navigating the oil section in your grocery store.

One of my favorite things about these bars is that each one is like it’s own tiny cake. I used my brownie bar pan to make them. The batter was really thick, and I had to use a big spoon to get the batter into the sections of the pan. That took a little extra time (compared to spreading it out in a 9″ x 13″ pan), but I love the individual sized cakes so much, it’s worth it!

Just make sure that you take them out of the pan before they cool all the way. As the individual bars stay in the brownie bar pan, they’ll continue to cook a little bit from the heat of the pan and get a bit dried out. (Trust me on this one.) Give them a few minutes to cool, and then turn them out onto a wire rack to cool completely. You may need a nylon spatula to pop the bars out of the pan. Just make sure you’re not using a metal spatula in your non-stick pan!

Chocolate-Peanut Butter Bars

Ingredients
  

  • 1 box moist chocolate cake mix
  • 1/2 cup oil
  • 2 eggs
  • 6- ounce package peanut butter chips

Instructions
 

  • In an electric mixer, mix cake mix, oil, and eggs on medium-low speed for 2-4 minutes. (Batter will be thick.) Stir in peanut butter chips.
  • Spoon batter into each section of a lightly greased brownie pan.
  • Bake at 350 degrees for 28-30 minutes, or until toothpick tests clean.
  • Cool in pan for a few minutes, then turn out on a wire rack to cool completely. (You may need to use a small nylon spatula to easily get the bars out of the pan.)
