White Chocolate Lemon Cake Mix Cookies

We love lemony desserts! In fact, lemon-flavored desserts are John’s favorites. Add a dash of white chocolate in with these Lemon Cake Mix Cookies, and they are perfect!
Our son loves to help in the kitchen. So I’m always looking for simple recipes that he can help with. While he is absolutely capable of helping me make Toffee-Chip Freezer Cookies, I don’t always have time for that, and he doesn’t always have the patience for that. So using a cake mix as the base for the recipe makes everyone’s lives just a little bit easier.
Instead of following the cake mix box directions, I used Greek yogurt and eggs in these cookies (see the printable recipe card below for instructions). Toss it all in your electric mixer, and let it go for a few minutes until the cake batter/cookie dough is light and fluffy.
It doesn’t get much easier than that, does it?
I went with Greek yogurt over regular yogurt because I like the consistency of Greek yogurt for cooking. And I knew the “tang” of the Greek yogurt would enhance the lemony tang of the cake mix. It’s such a great combination!
We mixed in some Ghirardelli white chocolate chips at the end, and then baked the cookies. Our son loved helping dump the ingredients into the mixer, especially the white chocolate chips! And, of course, he loved helping eat the cookies, too.

White Chocolate Lemon Cake Mix Cookies
Ingredients
- 15.25- ounce box of lemon cake mix we like Duncan Hines Lemon Supreme
- 2 eggs
- 1-1/2 cup vanilla-flavored Greek yogurt
- 1 cup Ghirardelli white chocolate chips
Instructions
- Combine cake mix, eggs, and Greek yogurt in the bowl of an electric mixer.
- Beat, starting on low, and gradually increasing to medium-high, for 3-5 minutes, until batter is light and fluffy.
- Stir in white chocolate chips.
- Lightly grease cookie sheets (we like Baker's Joy baking spray with flour).
- Drop cookies by rounded spoonfuls onto cookie sheets. Gently smooth the top of the cookies.
- Bake at 325 degrees F for 15 minutes, until cookies are set and a toothpick inserted into the center tests clean.
