Seriously. My college roommate used to make these for me every once in a while. They were delicious! I never learned how to make them, because I knew I would gain a million pounds. (Butter and sugar, anyone?)
I found this recipe in Gooseberry Patch’s new cookbook, “Foolproof Family Recipes,” and I knew I had to try them. I’ve tried store-bought no-bake cookies in the past, and they just didn’t cut it. (No surprise there.)
I haven’t lived with that roommate in… more years than I care to admit. And I haven’t had those No-Bake Cookies in as long. Needless to say, they were pretty built up in my mind. You know, those “never had better, won’t find as good as these ever again” cookies from the past. Holy moly… did these cookies live up to the hype!
The hardest thing about making these cookies was waiting the two minutes for the chocolatey mixture to boil. And then waiting until it cooled off enough to lick the spoon. (Ouch!)
Okay, so there were two hard things about this recipe. But really… a little patience makes those two things go away. (And by “a little,” I mean 2 minutes worth. So, come on, you can do this!)
These cookies didn’t even stay in the house as long as the Mini Cheddar Meatloaves. I definitely need to get out for a long walk this week…

No-Bake Cookies
Ingredients
- 1/2 cup butter
- 2 cups sugar
- 1/2 cup milk
- 4 Tablespoons baking cocoa
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats uncooked
- 1/2 cup creamy peanut butter
Instructions
- Combine butter, sugar, milk, and cocoa in a heavy saucepan.
- Bring the chocolate mixture to a full boil over medium heat. Continue boiling for exactly 2 minutes.
- Remove from heat and stir in vanilla. (The chocolate mixture will bubble up when the vanilla is added.)
- Add oats and stir.
- Add peanut butter and stir.
- Drop by heaping tablespoonfuls onto a baking sheet lined with wax paper. Let stand until cool and set.

Do I need to put the peanut butter in the no bake cookies for a reason?
I PREFER JUST CHOCOLATE NO-BAKES!

Hi, Ruth. I have not tried this recipe without peanut butter. In this recipe, I don’t think the cookies will “set” without the peanut butter, they will probably end up pretty smushy.
