I am pretty excited to head to the Food Wine Conference in sunny Orlando next week! I’m going to meet up with two of my good bloggy friends – Betsy from Desserts Required and Raquel from Organized Island – and I’m really looking forward to making some new bloggy friends! As a part of the conference, Florida Dairy Farmers is sponsoring a contest to develop a recipe made with milk. Looking ahead to summer, I thought these Mini Lemon Bundt Cakes would be just the perfect thing!

Don’t you think lemon is one of the perfect summer flavors? It’s so light and refreshing, and it makes me think of relaxing in the sun, no matter what I’m doing! I found these NordicWare Bundt Bites baking pans at my local Walmart (you can find them on Amazon here), and I’ve been waiting for the right recipe to try them with.

This recipe for lemon cakes couldn’t be easier! I started with a box of Duncan Hines Signature Lemon Supreme cake mix, skipped the box directions, and used whole milk, Greek yogurt, and melted butter instead.

Mix that all together and put the cake batter into your bundt bites pan, and off to the oven! It did take a little experimenting to figure out how much batter to put in each bundt cup. I settled on about 2-3 Tablespoons in each cup. I used a scoop like this one to get my cakes as even as I could.

And what better icing to go with a simple cake like this than a simple powdered sugar icing? Make this icing ahead of time, and keep it in the refrigerator until you’re ready to eat the cakes. Then drizzle it over the top of the cakes. If you put the icing on too soon, it will soak into the cakes. It still tastes delicious, it just doesn’t look quite as pretty. This easy dessert is already a big favorite around here!

Ingredients
  

  • 1 16.5- ounce box lemon cake mix we like Duncan Hines Signature Lemon Supreme
  • 1 cup whole milk
  • 1 cup plain whole milk Greek yogurt
  • 1 Tablespoon vanilla
  • 4 Tablespoons melted butter

For the icing:

  • 6 Tablespoons powdered sugar
  • 1 Tablespoon whole milk

Instructions
 

  • In a large bowl, whisk together the milk, yogurt, and vanilla.
  • Add the cake mix, stirring until the lumps are gone. (You could also use an electric mixer.)
  • Add the melted butter, and mix until combined.
  • Grease 2 Nordicware Bundt Bites baking pans. We like to use Baker's Joy baking spray.
  • Using a cookie scoop, add 2-3 Tablespoons of cake batter to each bundt bite cup.
  • Bake at 350 degrees F for 10 minutes, until a toothpick inserted in the center comes out clean.

For the icing:

  • Place powdered sugar in a small bowl.
  • Add the milk, a little bit at a time, stirring with a fork until incorporated.
  • Add more powdered sugar or more milk until the icing is the consistency you like.
  • Cover and refrigerate until use.
  • Drizzle icing over cakes before serving.

    Do you prepare the cake mix as noted on the box and then add the other ingredients?

    No, it’s easier than that! Ignore the instructions on the box and follow these instead.
