John has been asking me to make turkey salad for him for two years. And I always end up using all the leftover turkey before I get around to making turkey salad. So this year I made this Easy Turkey Salad before Thanksgiving!
If you like chicken salad and you like Thanksgiving flavors, you will love this turkey salad. I used all breast meat for this – I even made sure to include the tenderloins from the turkey breast. This recipe is so easy to put together. Mix everything up in a bowl before you even finish putting your leftover turkey away. Stash it in the refrigerator, and you’ll have Easy Turkey Salad ready to go for a midnight snack!
I like the turkey in bigger chunks, so I roughly chopped it with a knife. After I made it, John told me that he likes his turkey in small pieces. So the second time I made this turkey salad, I shredded the warm turkey breast in my electric mixer. That’s even faster than chopping!
This turkey salad is perfect on plain old white bread, toasted whole grain bread, or whatever is your favorite (or whatever you remembered to pick up at the grocery store). I made this recipe for Easy Homemade Bread Bowls, but made 10 smaller rolls for sandwiches instead of 6 larger bowls.
My only tip for this recipe is to use a larger bowl than you think you’ll need. You want to have plenty of room to (gently) mix your ingredients up and toss in the mayonnaise without worrying about spilling everything all over your counter. I used the biggest bowl from this set, then transferred the salad to a smaller container to store in the refrigerator. I also used a rubber spatula to mix my turkey salad, so everything didn’t end up smashed into mush.

Easy Turkey Salad
Ingredients
- 1 pound turkey breast cubed or shredded
- 2 small ribs celery diced
- 1/2 cup chopped pecans
- 1/4 cup dried cranberries
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon thyme
- 1 teaspoon sage
- 1 teaspoon parsley
- 1/2 cup mayonnaise
Instructions
- Combine all ingredients except mayonnaise in a large bowl. Gently mix ingredients together.
- Toss with 1/2 cup mayonnaise, until turkey and other ingredients are coated.
- Cover and refrigerate for 1-2 hours.
- Spoon turkey salad onto bread for sandwiches.
