I had so many leftovers from this Honey-BBQ Grilled Chicken Thighs recipe, I just had to find something else to do with all that chicken. We like chicken salad and turkey salad, so I thought, “why not try chicken salad with this delicious flavored chicken?” Guys. It’s delicious!
You don’t need to start with Honey-BBQ Grilled Chicken Thighs. If you start with plain cooked chicken, you just might want to add extra barbecue sauce and honey to the salad when you’re mixing it up. (I used Heinz Classic Sweet & Thick barbecue sauce again.)
I chopped my chicken into chunks before making this salad. My husband prefers his chicken shredded. If you know you’re going to make this salad, while your chicken is still hot you can shred it in your electric mixer. (How cool?!) If the meat is cold (for example, out of the refrigerator the next day like mine), then you’ll want to chop it with a knife.

Honey-BBQ Chicken Salad
Ingredients
- 4 cups cooked chopped Honey-BBQ Grilled Chicken Thighs about 8 thighs
- 1 cup chopped celery 4-5 stalks
- 1/3 cup mayonnaise
- 2 Tablespoons barbecue sauce I like Heinz Classic Sweet & Thick barbecue sauce
- 1 Tablespoon honey
- 6 sandwich buns
Instructions
- Chop chicken as coarsely as you like.
- Combine all ingredients (except sandwich buns) together in a large bowl.
- Mix gently to coat chicken. Soft spatulas like this work well for mixing this type of salad.
- Refrigerate in an air-tight container, or serve immediately.
- Split chicken salad evenly between 6 sandwich buns.
