Citrus-Herb Marinated Chicken

This recipe for Citrus-Herb Marinated Chicken has delicious summery flavors of lemon and fresh herbs. This recipe can be cooked on the grill or the broiler.

We don’t eat a lot of chicken around here. We have lots of other meat in our freezer, and it’s just easier to head downstairs to get something to thaw instead of heading out to the grocery store. Not to mention that it’s less expensive to use something I already have!

But I found some boneless, skinless chicken breasts that were close to their sell-by date and was marked down a bunch. So I stocked up! Most of the chicken ended up in our freezer, but I made this delicious recipe for dinner.

This chicken is marinated, so you do need to plan a little bit ahead to get it ready for dinner. You can marinate this chicken overnight if you’re planning ahead, or you can do a quick marinade for as little as 2-4 hours. Mix up the marinade and put everything in a Ziploc bag before you go to bed or before you go to work in the morning. It will be ready to toss on the grill (or under the broiler) for dinner.

This recipe is easy to cook under your broiler in your oven if you don’t want to stand outside and grill. You can also toss this chicken on your grill outside. Just make sure to check the internal temperature of the chicken before you call it finished – chicken is fully cooked at 165 degrees Fahrenheit.

Ingredients
  

  • 4 skinless boneless chicken breasts
  • 1/3 cup lemon juice
  • 1 Tablespoon honey
  • 1 Tablespoon sunflower oil or vegetable oil
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried rosemary
  • 3 chopped green onions
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Mix all ingredients, except chicken, in a small bowl.
  • Place chicken in a gallon-size Ziploc bag. Pour marinade over chicken and seal bag. Gently massage to distribute marinade. Refrigerate chicken in the refrigerator for 2-4 hours, turning occasionally.

To broil:

  • Preheat broiler.
  • Remove chicken from marinade and discard marinade.
  • Place chicken on unheated rack of a broiler pan. Broil 4-5 inches from the heat for 6 minutes, or until light brown.
  • Turn chicken and broil for 6-9 minutes more or until chicken is cooked through (165 degrees F).

To grill:

  • Preheat grill to high.
  • Remove chicken from marinade and discard marinade.
  • Place chicken on grill. Cook 5-7 minutes each side, or until chicken is cooked through (165 degrees F).
