This recipe for Citrus-Herb Marinated Chicken has delicious summery flavors of lemon and fresh herbs. This recipe can be cooked on the grill or the broiler.
Mix all ingredients, except chicken, in a small bowl.
Place chicken in a gallon-size Ziploc bag. Pour marinade over chicken and seal bag. Gently massage to distribute marinade. Refrigerate chicken in the refrigerator for 2-4 hours, turning occasionally.
To broil:
Preheat broiler.
Remove chicken from marinade and discard marinade.
Place chicken on unheated rack of a broiler pan. Broil 4-5 inches from the heat for 6 minutes, or until light brown.
Turn chicken and broil for 6-9 minutes more or until chicken is cooked through (165 degrees F).
To grill:
Preheat grill to high.
Remove chicken from marinade and discard marinade.
Place chicken on grill. Cook 5-7 minutes each side, or until chicken is cooked through (165 degrees F).
