You won’t believe how easy this Slow Cooker Chicken Corn Chowder is to make! Toss it in your slow cooker for the day, and it feels like a warm hug when it’s time for dinner!
And who wants to spend extra time in the kitchen? Not me! (And not kiddo, either!) This cookbook from Gooseberry Patch comes to the rescue! I always love a good slow cooker recipe. Don’t let the title fool you – even though it’s called “Slow-Cooker Christmas Favorites,” you can cook from this cookbook any time of year!
I tend to use boneless, skinless chicken thighs in my slow cooker recipes, but you can easily substitute boneless, skinless chicken breasts. I find that the chicken breasts can get a little dry in the slow cooker, but in a soup like this that won’t be a problem. I just chopped the chicken into bite-size pieces and tossed it into my slow cooker.
One word of caution on this soup… go easy on the garlic. I’m usually a huge fan of garlic. So even though the recipe called for 1 clove, we tossed in 2 cloves. Who would think, that in this much volume, that would make a difference? Well, it did. It made a big difference.
You only need 1 clove of garlic. Trust me.
Because there isn’t an easy way to “get rid” of that extra garlic flavor. Trust me.

Slow Cooker Chicken Corn Chowder
Ingredients
- 2-4 boneless skinless chicken thighs (or boneless, skinless chicken breasts)
- 3 14-3/4 ounce cans cream-style corn
- 15-1/4 ounce can corn drained
- 2 potatoes peeled and diced
- 1 onion diced
- 1 clove garlic minced
Instructions
- Chop chicken into bite-size pieces.
- Combine all ingredients in a 6-quart slow cooker. Stir gently.
- Cover and cook on low for 6-8 hours.
