You guys. This soup could not be easier! No prepping, no chopping, no dicing… Just toss everything into your slow cooker and you’re in business!
I found this recipe in “Almost Homemade” by Gooseberry Patch, and knew I just had to try it. I love tortellini, Farmer Doc loves tomato soup, it was a guaranteed hit! I did make a few tweaks to the original recipe, and I think this version is just amazing!
I usually use the pre-grated Parmesan cheese (you know the stuff in the green can). I decided that I was going to splurge a little bit and get some of the “real” stuff. I bought a block of Parmesan cheese and used my fancy-schmancy rotary cheese grater to do the work. That rotary cheese grater is so easy to use, and it makes grating up a quarter cup of Parmesan cheese so fast!
This hearty soup is really a meal in itself, but you could add some homemade bread or rolls to top it off.

Slow Cooker Tomato-Tortellini Soup
Ingredients
- 3 cloves garlic minced
- 32- ounce box chicken broth
- 8- ounce package cheese tortellini
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 cups frozen chopped spinach
- 14-1/2 ounce can diced tomatoes
- 1/2 cup tomato sauce
- 1 Tablespoon Italian seasoning
Instructions
- Combine all ingredients in a 6-quart slow cooker.
- Cover and cook on low for 2-4 hours, until the tortellini is tender.
- Serve immediately.
- Optional - top individual servings with more grated Parmesan cheese.
