Noodles in soup are one of my favorite things. And if those noodles are stuffed with cheese? Well, that’s a serious bonus! Tortellini in soup are so delicious! If you haven’t tried tortellini in soup before, you definitely need to try this Slow Cooker Sausage-Tortellini Soup!
This Slow-Cooker Sausage-Tortellini Soup is from Gooseberry Patch’s cookbook, “Slow-Cooker Fall Favorites.” And I am in love with this recipe! First, it’s super tasty, so it has that going on. Second, it makes a small mountain of soup – plenty to feed a crowd, or your family for a few days.
This soup is so easy to put together! All you do is brown the sausage, saute some of the veggies, and then throw everything together in your slow cooker for the rest of the day! The house smells amazing, and you’ve got a wonderful, hearty dinner ready to go!
It does only need to cook for about 4-5 hours. You might not want to fire up your slow cooker with this soup before a long day at work. But it would be perfect for a weekend afternoon. And then you’ve got plenty of leftovers for those busy weeknights!

Slow-Cooker Sausage-Tortellini Soup
Ingredients
- 2 pounds link pork sausage cut into bite-size pieces
- 1 onion chopped
- 1 green or orange pepper chopped
- 3 cloves garlic minced
- 2 cans green beans
- 1 Tablespoon dried parsley
- 2 teaspoons dried oregano
- 2 cups chicken broth
- 1 46- ounce can tomato juice
- 9- ounce package frozen cheese tortellini uncooked
Instructions
- In a large pan, saute sausage, onion, green (or orange) pepper, and garlic in a skillet over medium heat until browned; drain.
- Combine sausage mixture, beans with liquid, and remaining ingredients except tortellini in a 6-quart slow cooker.
- Cover and cook on low for 4-5 hours.
- Stir in tortellini. Cover and cook for 30 more minutes, until heated through.
