You can’t go wrong with mashed potatoes. And these Roasted Garlic Mashed Potatoes have so much flavor, they could almost stand on their own for a meal! (I promise to not tell anyone if you only eat mashed potatoes for dinner.)

Start with 3 pounds of potatoes. Mashed potatoes are a great way to use up potatoes that have started to go soft in your pantry. Oh, you don’t have any soft potatoes? Yeah… me neither… Firm potatoes will work too. Wash and peel them, then chop them into roughly 2-inch cubes. Toss them in some boiling water until the potatoes are soft. Put your cooked potatoes into an electric mixer, and add butter, cream cheese, salt, and pepper. Then get ready.

I know this sounds insane. I put 20 cloves of roasted garlic into 3 pounds of potatoes. You really need to trust me on this one. When you roast garlic, the flavor gets much more mellow. (Find out how here.) It’s nowhere near as sharp or as strong as fresh garlic. You don’t need to add all 20 at once. Start with a few, and taste your potatoes as you go. I was only planning on using 10 cloves. But that didn’t have enough flavor. So I added a few more… then a few more… and then a few more. Trust me, you’ll enjoy it!

The great thing about mashed potatoes is that you can taste as you go and make them just exactly the way you like them. Not enough garlic? Add a bit more. Not enough salt? Add a little more. Want them a bit chunky? Don’t mix as long in your mixer. Want them smooth? Add more milk and mix longer.

When you have your mashed potatoes just the way you want them, put it all into your slow cooker. Cover and cook on low for a few hours before serving. It really lets all the flavors come together and makes for some absolutely amazing mashed potatoes!

Roasted Garlic Mashed Potatoes

Ingredients
  

  • 3 pounds potatoes peeled and chopped
  • 1/2 cup 1 stick butter
  • 1 8- ounce package cream cheese
  • 1 Tablespoon salt
  • 1/2 teaspoon pepper
  • 10-20 roasted garlic cloves
  • 1/2-1 cup whole milk

Instructions
 

  • Boil potatoes in water for 10-15 minutes, until soft. Drain potatoes and place in bowl of electric mixer.
  • Add butter and cream cheese to the mixer. Mix on low to combine.
  • Add salt, pepper, and garlic cloves. Add 10-20 garlic cloves to taste.
  • Add 1/2 to 1 cup of milk, to desired consistency.
  • Beat potatoes on low until desired texture is reached.
  • Place potatoes in a 6-quart slow cooker, cover, and cook on low for 2-4 hours.
