Pumpkin seeds are such a tasty fall treat! Whether I’m cleaning out a pumpkin to carve, or getting ready to bake some pie pumpkins, I always save the pumpkin seeds. Plain, salted, roasted pumpkin seeds are delicious, but sometimes it’s fun to add some other flavors in the mix, too.

What You Need for Garlic-Parmesan Pumpkin Seeds

The ingredients for these roasted pumpkin seeds are pretty simple.

  • Cleaned pumpkin seeds
  • Butter
  • Grated Parmesan cheese
  • Garlic salt

How to Make Garlic-Parmesan Pumpkin Seeds

The most important thing to do before you start this recipe is to make sure your pumpkin seeds are clean and dry. (Check this post for tips on cleaning pumpkin seeds.) The dryer your pumpkin seeds are before you start, the faster they will bake.

All you need to do is melt the butter, stir the cheese and garlic salt into the melted butter, and toss the butter mixture with the pumpkin seeds. Then just spread the seeds out on a baking sheet and bake until crisp.

These roasted pumpkin seeds are a delicious snack by themselves. They would also be great in a snack mix. I like to add a few to a salad instead of croutons. When they get wet (like with salad dressing), they do get chewy again. So just add a few at a time to your salad, and they’ll stay crunchy for every bite.

Garlic-Parmesan Pumpkin Seeds

Ingredients
  

  • 1 cup pumpkin seeds (cleaned)
  • 1 Tablespoon butter
  • 1 Tablespoon grated Parmesan cheese
  • 1 teaspoon garlic salt

Instructions
 

  • In a small microwave-safe bowl, melt the butter.
  • Add the Parmesan cheese and garlic salt to the butter and mix well.
  • Place the pumpkin seeds in a small bowl. Pour the butter mixture over the pumpkin seeds and toss to coat.
  • Spread the pumpkin seeds out on a baking sheet.
  • Bake the pumpkin seeds at 300 degrees for 30-50 minutes. Toss the seeds once or twice during cooking to test for doneness. Seeds are done when they are golden-brown and crispy.
  • Cool for a few minutes on the baking sheet before eating.
  • Store in an air-tight container.

Notes

The dryer your pumpkin seeds are before you start, the faster they will bake. If possible, dry the pumpkin seeds overnight before starting this recipe.
