Simple Stovetop Pumpkin Soup

This recipe is based off an old recipe from a few years ago. I made a slow cooker version of this soup back in 2014. If I do say so myself, this stovetop version is even better, and just as easy!
The bones of this soup are canned pumpkin and chicken broth. Plus a savory onion, some yummy seasonings, and a bit of brown sugar and apple flavors. And, of course, bacon!
This is not just a case of “bacon makes everything better.” Of course, bacon does make everything better. But the crunchy, salty taste of the bacon really does taste delicious with the smooth sweetness of this pumpkin soup. You’ve got to try it!
You can absolutely use fresh pumpkin for this soup if you want. (Find directions for cooking pumpkin here.) But for something like this, canned pumpkin is just so much easier!
Of course, if you use fresh pumpkin, you’ll want to save those pumpkin seeds! Toss a few of those in your soup instead of (or with) the sunflower seed kernels for some delicious salty crunch.

Simple Stovetop Pumpkin Soup
Ingredients
- 1 Tablespoon extra-virgin olive oil
- 1 small onion diced fine
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons pumpkin pie spice
- 4 cups chicken broth
- 1-1/2 cups apple cider
- 2, 29- ounce cans pumpkin
- 1/2 cup light brown sugar
- 1/2 cup whipping cream
- For garnish: sunflower seed kernels 6 slices bacon (cooked crisp)
Instructions
- In a large soup pot, heat olive oil over medium heat.
- When the oil is hot, add onion, salt, pepper, and pumpkin pie spice.
- Saute onion and spices, stirring frequently, until onion is tender (about 3-5 minutes).
- Add chicken broth and apple cider, stir well.
- Add pumpkin and brown sugar, stir until smooth.
- Cover and heat on medium heat until soup starts to bubble.
- Reduce heat to low and simmer, covered, for an additional 15-20 minutes, until soup is heated through.
- Just before serving, turn off the heat and stir in whipping cream.
- Garnish individual servings with sunflower seeds and crumbled bacon.
