If you like butternut squash soup, you'll love this Simple Stovetop Pumpkin Soup! It's a delicious way to welcome in the fall and warm up after a long day.

  • In a large soup pot, heat olive oil over medium heat.
  • When the oil is hot, add onion, salt, pepper, and pumpkin pie spice.
  • Saute onion and spices, stirring frequently, until onion is tender (about 3-5 minutes).
  • Add chicken broth and apple cider, stir well.
  • Add pumpkin and brown sugar, stir until smooth.
  • Cover and heat on medium heat until soup starts to bubble.
  • Reduce heat to low and simmer, covered, for an additional 15-20 minutes, until soup is heated through.
  • Just before serving, turn off the heat and stir in whipping cream.
  • Garnish individual servings with sunflower seeds and crumbled bacon.
