small onion
diced fine

teaspoon
salt

teaspoon
black pepper

pumpkin pie spice

cups
chicken broth

apple cider
2, 29-
ounce
cans
pumpkin
1/2
cup
light brown sugar
1/2
cup
whipping cream
For garnish:
sunflower seed kernels
6 slices bacon (
cooked crisp
)
Instructions
In a large
soup pot
, heat olive oil over medium heat.
When the oil is hot, add onion, salt, pepper, and pumpkin pie spice.
Saute onion and spices,
stirring
frequently, until onion is tender (about 3-5 minutes).
Add chicken broth and apple cider, stir well.
Add pumpkin and brown sugar, stir until smooth.
Cover and heat on medium heat until soup starts to bubble.
Reduce heat to low and simmer, covered, for an additional 15-20 minutes, until soup is heated through.
Just before serving, turn off the heat and stir in whipping cream.
Garnish individual servings with sunflower seeds and crumbled bacon.
