Mexican recipes like tacos are so easy to throw together. We love these kinds of recipes, especially on busy weeknights! I’ve collected 11 of our family favorite Mexican-inspired recipes. Add them to your list of go-to busy day meals!

Tacos

Of course, tacos are an easy Mexican dish that the whole family will love. You’ll love these classic Slow Cooker Tacos for a Crowd or Crock-Pot Chicken Tacos. (This is my favorite slow cooker for these recipes.) This Taco Bake with Chili Cheese Fritos is always a big hit here. You’ll love Freezer-Friendly Taco Rice – dish it out like tacos, wrap it up like a burrito, or just layer it on tortilla chips to make nachos! Make a double batch, and keep some in the freezer for a busy weeknight. If you want something a little different for taco night, try these BBQ-Ranch Baked Turkey Tacos or Slow Cooker Cheesy Taco Dip.

Enchiladas & Burritos

These Chicken & Black Bean Burritos are so delicious! If ground chicken isn’t your thing, you can substitute any ground meat you like. Turkey Enchiladas are always delicious – use leftover turkey or leftover chicken, or just grab a cooked rotisserie chicken from the grocery store! If you like enchiladas without all the work of wrapping them up, you’ll love this Enchilada Casserole.

We always have a stash of these Stay or Go Burritos in our freezer. They are perfect for a meal on the go, or a fast family dinner when you’re pressed for time. And for something really fun, try this Tex-Mex Turkey Lasagna. Like all these Mexican recipes, it’s wonderful with leftover turkey or chicken, or even ground beef.
