Crock-Pot Chicken Tacos

Crock-Pot Chicken Tacos

Weeknights are always about quick and easy meals around here. The crockpot always features prominently in our meal planning (or lack thereof). These Crockpot Chicken Tacos are the perfect recipe – it takes less than 5 minutes to prep, and then you can walk away and forget about it until you’re ready to eat! (Thanks to my good friend Dani for this easy meal idea!)

Place the chicken in the bottom of your slow cooker. Add two more ingredients. Then cover and cook on low for 5-6 hours. Really. That’s it!

One comment about cooking the chicken. You can use chicken thighs or chicken breasts in this recipe. Chicken thighs are a little more forgiving with long cooking times. Chicken breasts can dry out after too long in the slow cooker. I use a meat thermometer like this one to make sure the chicken doesn’t get overcooked.

When you’re ready to eat, take the chicken out of the slow cooker and roughly shred it with two forks or your electric mixer. Put the shredded chicken back in the crockpot and give it a good mix with the sauce. Put the chicken on tortillas, and top it with your favorite taco toppings!

Ingredients
  

  • 2-2.5 pounds boneless skinless chicken breasts (or boneless, skinless chicken thighs)
  • 1 package taco seasoning
  • 16- ounce jar salsa
  • Shredded Mozzarella cheese
  • Optional: avocado green onion, or other toppings

Instructions
 

  • Place chicken in a 6-quart slow cooker. Sprinkle chicken with taco seasoning, then pour salsa over chicken.
  • Cover and cook on low for 5-6 hours.
  • Before serving, roughly shred chicken with 2 forks.
  • Serve in tortillas topped with Mozzarella cheese and your favorite taco toppings.
