We love sloppy joes. They are so easy to make, especially when you can just toss everything in your slow cooker. The Tex-Mex flavors in this sloppy joe recipe kick things up a notch!
This would be the perfect time to get out some of that cooked ground beef you have in your freezer. If you haven’t done this before, you’ll want to read this post – How to Cook Ground Beef in a Slow Cooker. It is one of my all-time favorite kitchen hacks! It’s also a super-easy way to cook up a whole bunch of ground beef at once. Then freeze it in smaller batches to use as a base for a super-quick dinner on busy nights.
I used 1 can of diced tomatoes with green chilis. I don’t like things all that spicy, so this was just enough for me. If your family likes the spicy stuff, add in a 4-ounce can of diced green chilis or some sliced jalapeno peppers. Or just have those on the side for toppings! If you really don’t like spicy, use plain diced tomatoes. And remember, you can always cool your sandwich down with a dollop of sour cream!
You know, this would also be delicious in a crunchy taco shell with all the toppings…

Slow Cooker Tex-Mex Sloppy Joes
Ingredients
- 2 pounds ground beef
- 2 onions diced
- 16- ounce can refried beans
- 10- ounce can enchilada sauce
- 10- ounce can diced tomatoes with green chilis drained
- 1-1/4 ounce package taco seasoning
- Optional: 4-ounce can diced green chilis sliced jalapenos, shredded Cheddar cheese
Instructions
- In a large skillet, brown the ground beef and onion.
- Transfer beef mixture to a 6-quart slow cooker.
- Add refried beans, enchilada sauce, drained tomatoes, and taco seasoning to the beef mixture. Stir well.
- If desired, add additional diced green chilis.
- Cover and cook on low for 4-6 hours, until heated through.
- For more spice, stir in sliced jalapenos.
- Serve on hamburger buns, topped with shredded Cheddar cheese. Serve with diced green chilis or sliced jalapenos for toppings.
