Cheesy Cornbread Sloppy Joes

Sloppy Joes are so easy to make, and so family-friendly. (Unless you happen to be my son… this week… Last week he thought they were great…) This is a delicious, sweet twist on sloppy joes that will have your family fighting over the leftovers!

This recipe is from “Hometown Harvest” by Gooseberry Patch. John’s response when he tried this was, “This is great, definitely make it again!” (Kiddo, on the other hand, wasn’t quite as thrilled. But I also wouldn’t let him eat dinner in front of the television, so that might have had something to do with it…)

I mean, come on. Who doesn’t love sloppy joes? And when you add in a good dose of brown sugar, a bunch of Cheddar cheese, and some easy-to-make cornbread, it’s a winner!

P.S. – The cornbread means you don’t need to use a bun… Just grab a fork or a spoon and dig in!

The recipe calls for a box of Jiffy corn muffin mix. We love that stuff – it’s inexpensive and simple to make. If you want, you can also make corn bread from scratch. It’s surprisingly easy! Here’s our tried and true recipe.

I mean, you might want to add a vegetable or a simple salad to this… but there is an onion in it… that’s a vegetable. Totally counts, right?

Vegetable or not, John beat me to the leftovers on this one. And that never happens! That is a glowing endorsement in this house!

Cheesy Cornbread Sloppy Joes

Ingredients
  

For the sloppy joes:

  • 2 pounds ground beef
  • 1 onion chopped
  • 1-1/2 cup ketchup
  • 1/2 cup brown sugar packed
  • 2 Tablespoons Lea & Perrins Worcestershire sauce
  • 1 teaspoon chili powder
  • Salt & Pepper to taste
  • 2 cups shredded cheese

For the cornbread:

  • 8-1/2 ounce package Jiffy cornbread mix
  • 1/2 cup milk
  • 1 egg beaten

Instructions
 

  • In a medium skillet, brown ground beef and onion with chili powder, salt, and pepper.
  • When the beef is cooked through, stir in ketchup, brown sugar, and Worcestershire sauce.
  • Simmer, uncovered, over low heat for 10 minutes.
  • Transfer the beef mixture to a 9x13 baking pan. Top with cheese.
  • In a small bowl, stir together the cornbread mix, milk, and egg.
  • Evenly spread cornbread batter over the cheese.
  • Bake, uncovered, at 350 degrees for 25-30 minutes, until the cornbread is golden.
