Easy Cheesy Slow Cooker Sloppy Joes

Sloppy joes are a staple in our house, so I’m always looking for ways to change them up a bit. If you love cheese, you’ll love this version!
These are not exactly health food… It’s basically 2 pounds of ground beef and 1 pound of Velveeta cheese with a few extra seasonings. But, guys… they are so good! Eat it on a bun, make it an open-faced sandwich, or just scoop it up with chips! No matter how you decide to eat it, it’s delicious.
Even our currently picky eater son loved these. I called it “cheesy meat” and he was sold!
I cooked the ground beef right in our slow cooker – on the slow cooker setting! This post tells you how I cook ground beef in the slow cooker in bulk. But you can do smaller amounts for a single meal, too! You will want to stir the beef frequently as it’s cooking to break it up. (I love a Mix and Chop like this one.) The great thing about cooking ground beef in a crockpot is that it will crumble very finely. Lucky for you, all the cheese in this recipe helps that super-fine ground beef stick together so it doesn’t make a giant mess as you’re eating it!

Easy Cheesy Slow Cooker Sloppy Joes #SundaySupper
Ingredients
- 2 pounds ground beef
- 1 onion chopped
- 4 garlic cloves minced
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 4 Tablespoons Worcestershire sauce
- 16 ounces Velveeta cubed
- 8 hamburger buns
Instructions
- Put ground beef, onion, and garlic in a 6-quart slow cooker. Cover and cook on high for 1-2 hours, stirring occasionally until the meat is cooked through and crumbled. (A mix-and-chop like this one helps to break the meat up easily.)
- Add the ketchup, brown sugar, and Worcestershire sauce to the meat mixture. Stir well to mix. Cover and continue cooking on high for 15-30 minutes until heated through.
- Add the cubed Velveeta. Stir to incorporate. Cover and continue cooking on high for 30-60 minutes, stirring occasionally until cheese is melted.
- Serve on hamburger buns immediately.

I was never much of a sloppy joes fan—I think it was the lack of CHEESE!!! What a yummy twist.
